I'm not going to pretend to remember much about a sandwich I made and ate over two months ago but I know that it was a hefty slopper and once I picked it up I couldn't put it down. It was tasty but a bit unwieldy. The Cheese was a processed sharp cheddar from Crystal Farms in Lake Mills so it had that nice melt to it. The Spicy Chili Crisp is always a nice addition to a sandwich and if you haven't tried it yet I'm not sure what you're waiting for - there's a pandemic going on and you should be experimenting with more hot sauces and making many sandwiches. It's that simple.

Breakfast Sandwich #159 - Almost Forgotten Salami Sandwich

Somehow I forgot about Sandwich #159 and went right to #160 so things are a little out of order but I couldn't just leave #159 off of the list so I'm backtracking a bit. It's going to be OK.

Hard salami and other non-breakfast sausages are underutilized on breakfast sandwiches. They have the desired salty and fatty components and in proper hands can make for an exceptional sandwich. It can also be wasted when handled by amateurs but we can't really blame the sausage in these specific instances. It will not surprise you that we have messed around with alternative breakfast sausages in the lab, sometimes with success and sometimes to a somewhat shameful conclusion. That's fine. We have to take some risks here, nobody wants to hear about bacon all the time. 

It's pretty even though the top looks much bigger than the bottom.

The Sandwich - If I recall properly this sandwich was the result of me being awake very early on a Monday and desiring a breakfast sandwich. I then took stock of what I had on hand, got a little creative, and here we are.

The Result - I made and ate this sandwich almost 7 weeks ago. I'm not going to sit here and breakdown the flavors and textures of this sandwich at this point, but I know it was delicious. I know the egg was cooked nicely and it was a gooey mess. I know I have yet to regret adding red onion or avocado to a sandwich. And I know that hard salami is a great meat for a breakfast sandwich.

First, some confessional house cleaning. I skipped Sandwich #159. It doesn't exist. Sandwiches #160 and #161 have already been posted to the Instagram page so in the name of consistency I'm posting here with the same numbering and my next sandwich will be #159. I know you don't care but sandwich historians will appreciate this information. We're all about historical accuracy here during the age of pandemic.

Let's get right into it.

What's not to like? As far as my photos go, this one is pretty decent.

It doesn't look quite as pretty here. It looks kind of normal. So much hidden beneath the surface.
The Sandwich - Sourdough English Muffin, Bacon, Egg, Morel & Leek Jack Cheese, Chipotle Mayonaisse. This was a quick lunchtime breakfast sandwich. I was working from home and had all the goods with a special cheesy twist - a Morel & Leek Jack cheese from Laack Brothers Cheese Company. I also had a new jar of Chipotle Mayonnaise from Sir Kensington's. Not making a breakfast sandwich would have been foolish. The morel & leek cheese had a subtle, earthy flavor and that matched nicely with the smokiness of the chipotle mayo and bacon and the gooey yolk. This was a quick and easy winner, no doubt about it.

Don't ever skimp on the avocado.

It looks kind of skewed and crazy but also packed with enough flavor for at least two sandwiches.

What you're looking at here is more or less a blueprint for a flavor bomb. It sprayed my taste buds with shrapnel and the collateral damage is every breakfast sandwich that comes in its wake. Note that I overcooked the egg a bit so there wasn't any runny yolk and it DIDN'T EVEN MATTER. I think we're all learning a lot during this pandemic.
The Sandwich - Sourdough English Muffin, Bacon, Gouda, Egg, Avocado, Red Onion, Spicy Chili Crisp. I think the caption above sums it up nicely and there isn't much to add to it. The Spicy Chili Crisp put it over the top. My first breakfast sandwich experience with Spicy Chili Crisp really opened my third eye, as they sorta say in Sandwich Hinduism, but they call it the third slice, like that middle slice of bread on a club sandwich. This is a real thing and you should look into it. I can't explain it, I can only point you in the right direction.

I guess I'm late to the party for the Lao Gan Ma Spicy Chili Crisp Cult. I'm no fan of cults but I enjoy a nice party and the party is here, right here on my taste buds. The party rages and shows no signs of abetting. The neighbors can call the cops, who cares? We'll greet them on the front lawn and fling forkfuls of Spicy Chili Crisp in their direction and soon they'll join us and we'll make them a breakfast sandwich laden with Spicy Chili Crisp and after one big bite they'll let me take their guns and blast holes in the ceiling while we dance about and yell like idiots.

I don't know why I'm blasting holes in the ceiling of my kitchen. I guess this is cultish behavior after all.


This review was meant to be a love letter to Spicy Chili Crisp and it was easier to post it here than to actually mail it to:

I may still send them a postcard. My original plan for this review was to take one of the all-time great love letters and alter it to be about Spicy Chili Crisp but it seemed too (A) difficult, (B) confusing and (C) creepy (somehow):

‘My Own Condiment, Your flavour is quite lovely, and it is a marvel that those red-rose chili flakes of yours should be made no less for the madness of noodles and broccoli than for the madness of sandwiches. Your slim gilt soul is the flavour between passion and poetry.’

See what I mean? (Stolen from the letter of Oscar Wilde to Lord Alfred Douglas). Honestly, I like it, but it's still kind of weird.

Also, "Foodstuffs" is my new favorite word and I may start adding it to the end of every restaurant I mention. "OK, cool, I'll meet you at Los Gamelos Foodstuffs at 7".


This is what we're talking about. I'm getting Lao Gan Ma's face and apron tattoed on my neck next week.
Here is a little background on this sauce. The formatting of that page is horrific but it'll give you a good history of this foodstuff, if you care about that. From what I can tell she is the Chinese equivalent of Aunt Jemima and the Quaker Oats guy and Uncle Ben and Tony The Tiger all wrapped into one.

But you probably don't care about any of that.

You just want to know how it tastes and nothing I say here will truly elucidate the matter. But that won't stop me from saying it's oily, garlicky, crispy, spicy (but not overly so) and rich. My favorite word to describe it though is "earthy". Yeah, earthy. I'm not even going to try to explain that, you'll just have to try it for yourself. Rather than read about my sandwiches you should already be on your way to the Asian Market (or for my Asian readers, "The Market") to get some of this stuff.

So, what's all this about? It's about how this condiment pairs so perfectly with chicken egg. That's what we set out to research with these sandwiches and you can already tell how well it went.

Overcooked the egg a bit but you can see that spicy chili crisp creeping out and that is VERY exciting.
The Sandwich - English Muffin, Egg, Bacon, American Cheese, Spicy Chili Crisp. A classic breakfast sandwich combination now enhanced by Spicy Chili Crisp. It's a full, wide flavor (which sounds like I'm describing some new kind of Marlboro, but I'm not.) The egg was not as runny as I would have liked it but I wasn't worried about it on this day. The sandwich was fantastic but I knew I had to try it in a different configuration.


 You can see the Spicy Chili Crisp lurking beneath the perfectly ripe avocado. The top piece of bread holds my last slice of Deli Deluxe Cheddar Kraft Single and a slice of Kraft American Cheese.

 The Sandwich - Sourdough Bread, Egg, Bacon, American Cheese, Deli Deluxe Sharp Cheddar, Avocado, Spicy Chili Crisp. I had one slice of the Deli Deluxe Cheddar left but I didn't think that was enough so I added an American Single. This was my only misstep on this sandwich, I think when it combined with the sourdough it made it just a bit gummy on the palate. Otherwise, this might be the best breakfast sandwich I've ever made. The Spicy Chili Crisp and the avocado paired perfectly with the chicken eggs, cheese and bacon and I don't have anything else to say about this sandwich other than when I took the first big bite I loudly proclaimed "Holy Fuck That Is Tasty". Can I get a witness?

Breakfast Sandwich #152 - Lab Report: Lightning Round and Shitty Web Sites

Sandwich: Lab Sandwich - English Muffin, chicken egg, bacon and cheese with spinach.

Let's just get right into this with the basic info: Newly Weds King Size Sourdough English Muffin (their web site is clunky but they have some good looking recipes on it if you're into that kind of thing), Usinger's Uncured Bacon (not shown on their site), scrambled chicken egg with some baby spinach mixed in cause I had to use it up, Kraft Deli Deluxe Sharp Cheddar (linked to some weird wholesale food site cause the Kraft web site is garbage and appears to only list about 2% of their products. That's probably the issue with Kraft - they're so busy gobbling up brands they don't even have time to add them to their site. They probably don't even know what they own anymore. Not cool, Kraft.) and finally Cholula Sweet Habanero Hot Sauce (this is the only site linked here that actually links directly to the product in question). 

This particular lab project was focused on processed cheese and hot sauce. 

When I first considered buying the Deli Deluxe cheese my thought was "this is silly". And it is. Deluxe processed cheese? C'mon. But we can't assume these things and the lab exists for this reason.

We also wanted to test drive the Cholula Sweet Habanero Hot Sauce. Full disclosure - this hot sauce was sent to me by the Cholula people along with a Cholula pajama set. These items were won as part of a contest and were not sent to me because I am America's Breakfast Sandwich Sweetheart, although I am that, obviously. 

I could have centered this on a plain plate and removed the rice cooker but I did none of that.
The Result - The Deli Deluxe Cheese isn't quite as creamy and melty as your good ol' regular processed American cheese but it does have a bit of that cheddar zip. It worked well on this sandwich but ultimately I don't think it's worth the higher price tag. In terms of flavor, I think you'd be better off purchasing your favorite cheddar cheese from a creamery such as Shullsburg Creamery and you'll get way more cheese for your buck. However, it does melt better than real cheddar and you may appreciate that for your sandwich. 

The Sweet Habanero hot sauce was new to me although I've been partial to Cholula brand hot sauces for years. The sweet and the heat hit the tongue immediately but the heat dissipates quickly, which is good for a guy like me. If you're a real heat seeker you might need to douse your sandwich with this to get the burn you crave. For me, it's the perfect amount of heat and not as hot as I expected when I saw "habanero". I still prefer their green or original hot sauce for a breakfast sandwich, but I'll be trying to find the perfect compliment for this flavor.

Finally, I recommend throwing a little spinach into your scrambled eggs. It gives the sandwich some color and all manner of vitamin and mineral. You don't get the runny yolk you get when the chicken egg is fried or whatever but you can do that next time.

Breakfast Sandwich #149 - Lab Report: Pick a Peck of Pepper Cheese

A brief report from the lab due to the fact that I had two kinds of pepper cheese and was awake far too early on a Tuesday morning. 

The cheeses in question are Crystal Farms Cracked Black Pepper White Cheddar and Sartori Black Pepper Bellavitano. The English Muffin was a Newly Weds Foods Sourdough (King Size). Note that the Newly Wed Foods site has some amazing "Breakfast Sandwich Concepts" recipes if you're looking for inspiration beyond the scope of my admittedly limited cooking skills. "Fried Onion Ring, Sausage Patty with Poached Egg (and Goat Cheese)"? Yowza!
This was a simple construct - I put one cheese on the top half and one on the bottom half and toasted the muffin. Honestly, it could have been toastier but that's how it went down. Add bacon and chicken egg and some Cholula hot sauce (just in case there wasn't enough pepper flavor), and *BOOM* - Tuesday morning breakfast sandwich.

The Result - Was it too peppery? No! Was adding Cholula Hot Sauce overkill? No! Was this an amazing way to start a Tuesday? Yes! Does anybody care? HELL NO!

What did we learn here, if anything? I think the big takeaway is that is you have trouble sleeping and are awake at 5 am for no reason you should consider making a tasty breakfast sandwich.

Breakfast Sandwich #146 - Lab Report: Deriliction of Duty and Some Organic Stuff

Just bear with me for a minute on another report from the laboratory. It's entirely possible I'm veering wildly off my mission with yet another lab report but that's the way things are. Nobody feels worse about subjecting you to another lab report than I do but the lab is not for "feelings" or "hugs", it's about science. Obviously.

Imagine my shock when I realized I had a different type of bacon, a new type of English muffin AND some kind of organic macaroni & cheese on hand. I knew I had to fashion a sandwich. Nobody could deny such a thing.

The use of mac n cheese is not new to the lab although previous attempts used leftovers of the homemade variety. This time I had Full Circle Market organic brand. My regular go-to bacon is Usinger's Applewood Smoked but I had switched it up and purchased the Hickory Smoked variety. In the past, I had tried a few varieties of English Muffin with Bay's and Thomas' being the most frequent. Last trip to the store I stumbled across an endcap display for Dave's Killer Bread and ended up purchasing some English Muffins made with "Rockin' Grains" (whatever the fuck that means). Those are also organic and GMO-something-or-other.

The point is that there were several items that had not yet been tested in the lab and that's my excuse for sandwich #146 being yet another lab report rather than a report from the field.

You have to admit that mac 'n cheese spilling out of the sides is rather tantalizing. Honestly, I spent way, way, way too long agonizing over whether to put the egg between the bacon and mac 'n cheese, or the mac 'n cheese in between the bacon and the egg. This is what I considered the entire time the egg cooked. Ultimately I thought the mac 'n cheese probably wouldn't want to stay in place and I might need to mash it into position. I was afraid if the egg was beneath the mac 'n cheese I would prematurely break the yolk when trying to mash the mac into place. That thought made me feel emotionally fragile and so I decided the egg would go on top. You dig?

Clearly putting the egg on top was the right choice because this yolky boi was ready to gush like Sally Fields after winning an Academy Award. I don't know how those two noodles ended up on top but they look good up there.
The Result - This will seem obvious but adding macaroni to a sandwich is quite possibly the definition of overkill. Even creamy macaroni and cheese is a bit much. Don't get me wrong, the sandwich was tasty but probably not worth the extra effort of making the mac 'n cheese, or the extra calories and carbs. How many of you are going to make mac 'n cheese at 7am while drinking coffee, anyway? That's a little peek behind the curtain of the lab. The Rockin' Grains muffin tasted a little too wheaty and grainy but kept this from being even more unhealthy than it already was.

Let's just move on.

Breakfast Sandwich #137 - Ancora Coffee aka For Four Fjords

You might recall that back in May when I was out for Breakfast Sandwich #135 I stopped at Ancora Coffee for a beverage and noted their breakfast sandwich list. That info was tucked away for future reference and accessed on this fine morning when I had time to bike down there before the Art Fair on the Square hordes started mucking up the scene.

On my initial visit in May I was smitten with the Sausage Jalapeño sandwich but an astute reader commented that The Number Four deserved consideration.

I'm here to serve the people and I saw this choice as a win/win situation.

I almost didn't see it as a choice at all - while biking down there I considered ordering both sandwiches. Part of my reasoning was that I was biking and therefore burning calories, admittedly only a fraction of the caloric explosion that two breakfast sandwiches would introduce into my framework. The thought was discarded when I accepted the realization that two breakfast sandwiches would surely cast me into a state of bloated torpor and that sounded yuckier than the joy of eating the two sandwiches.


They have options. There was also a special that involved blueberries but I was too focused on The Number Four.

The Sandwich - The Number Four. I keep saying "The Number Four" and I'm starting to feel like I'm on Sesame Street. No options are offered when you order but it's worth noting that while this sandwich comes with scrambled chicken egg some of the other sandwiches come with a fried egg. You could probably get a fried egg if that's your thing but more on that later. You might think that the chipotle aioli/cherry chutney/pepperjack cheese trifecta would make this a spicy little number but it does not. It has a touch of heat but the flavors blend well with the cherry chutney taking the helm. The chutney also has nice tamarind note that comes out with each bite. The bacon was crispier than I like it and even though I knew the eggs were going to be scrambled and therefore without a runny yolk that did disappoint me a bit. I think this sandwich could handle a runny yolk but it would be a messy little humdinger. The chutney gives this plenty of moisture and the cheese and aioli help with the viscosity. The English muffin did a valiant job of holding things together but it could only do so much and this was one of those fun sandwiches where chunks of egg squish out the other side when you're biting it. This is a not a complaint, it's a public service announcement.

The Result - 4.44 Number Fours out of 5 Number Fours. The bacon/cherry chutney pairing is what makes this sandwich but you probably already figured that out. It's a fantastic little sandwich but the overly crisped bacon kept it form pushing the stratosphere of the ratings. Bacon crispiness is a personal preference but I like to quibble with these highly ranked sandwiches, otherwise, what's the point? I'm not going to talk about the egg anymore, you know where I stand. I'm also not going to say the number "four" for awhile, or even words that sound like "four", such as "Ford" and "fjord". But I can say this - I am going to get back there for the Sausage Jalapeño one of these days.

Breakfast Sandwich #133 - Java Cat aka The Cat Came Back

How many times have I driven past Java Cat and not checked to see what the breakfast sandwich situation is? Many, is the answer. A few of those times I ended up just down the road at Crema Cafe and that's never a wasted journey.

Java Cat offers you some options to build your own sandwich - bacon or sausage (that's standard) but the real choice is in the sandwich delivery vessel - bagel, English muffin, brioche bun, croissant or french toast. I eliminated french toast right off the bat, it gave me a flashback to the McGriddle and that didn't go well at all. This particular day was feeling like a classic sandwich day so I went the sausage and English muffin. Why mess around?

This photo is not particularly exciting, I'm aware of that.

How about if I rotate the plate a tiny bit? More exciting? No? There is value in these photos though - you can see the red pepper and evidence of Boom Boom sauce. Also, I would say that English muffin is toasted perfectly but the egg is cooked beyond the threshold of my preference. That's the way it goes sometimes, it's a jungle out there.

The Sandwich - Sausage, Egg & Cheese on English Muffin. I already covered this a bit, BUT WAIT! There's more! The menu board said you can "Add Boom Boom Sauce and red peppers for $.55". I ordered mine with Boom Boom Sauce before I even asked what it was. It turns out it's a chipotle sauce. That works for me. Java Cat offers several bread choices but they don't offer variations on how to cook your egg and they don't serve it with a runny yolk. This is where the Boom Boom Sauce really pays off, adding a pleasant viscosity that wouldn't otherwise be there. It could have handled a runny yolk although it probably would have gotten a bit messy. The sausage and American cheese were standard breakfast sandwich fare, in a good way. It all blends together into a classic breakfast sandwich taste that you know and love.

The Result - 4.00 Cat Sandwiches out of 5 Cat Sandwiches. It's a solid sandwich and perfect if you want to grab a cup of coffee and a bite before you go off to do whatever it is you do after you eat a sandwich. I ate mine on the premises but the grab and go factor is there. I'll likely come back to the Java Cat and try a bacon sandwich one of these days. I also recommend the hot chocolate although it was probably my last of the season. It's time to move into iced coffee season.

Breakfast Sandwich #126 - What The Hell? aka Lab Failures

This experiment started as a chance to use my new NORPRO 666 non-stick egg cooking rings. A couple of quick notes about those cooking rings - why is their product number The Number of The Beast and if they are sold as "non-stick" why is the first instruction to coat them with non-stick cooking spray before use? I guess if you're cooking chicken eggs IN HELL they tend to stick on account of the extreme heat. How are you going to cook eggs on a medium to low temperature when you're in the lake that burns with fire and sulfer? These are problems that fall well outside the scope and mission of the lab. This is a modest operation we have here.

The non-stick egg rings were an attempt to ditch the Mason Jar lid method which I've documented and never been fully satisfied with mostly due to the hassle of washing egg out of the lid rim. While prepping for this I realized I had leftover chili mac and considered how I could add that to the sandwich. My immediate thought was that it would be an impractical mess but I went ahead with the idea because that's how it works around here. To realize the perfect sloppy sandwich you sometimes have to go too far and if that means going into the project with failure hovering in your peripheral vision, so be it.

Right off the bat I broke the yolk and put the ring in upside down. 

The cheese did melt a little more but not quite enough. 
The Sandwich - I already told you about the broken yolk and while I was messing with the English Muffin and chili mac (which was heating separately) I overcooked the egg a bit. The English Muffin wasn't quite toasted enough, the slice of American cheese didn't melt as much as I wanted and even though I assembled the sandwich and paused for a few photos the chili mac was still hot enough to burn the roof of my mouth. I didn't even attempt to cut the sandwich for the usual cross section photo and after two bites the sandwich was a predictable mess and I had a burnt hard palate, which was upsetting. 

The Result - The sandwich was OK but it had too much working against it and nobody thinks putting chili mac on an English Muffin is a good idea. It doesn't execute properly. I'll try to be more practical in the future or better yet, go to an actual restaurant.

Breakfast Sandwich #121 - Lazy Jane's aka Still Lazy After All These Years

My previous review of Lazy Jane's was in May of 2016 but I didn't know that until I looked it up just now. It's likely I would have guessed it had been about two years. I usually don't consider going there due to the inevitable line-out-the-door but it was suggested to me on this early morning and I immediately heard the call of the scone. I knew if we got moving we'd beat the line and we did. It didn't appear that much had changed since my previous trip and why would they change anything? Why mess with a line that snakes out the door every weekend?

They wisely file would be diners past the bakery case (OK, they probably don't have a choice) and choosing your scone is probably more difficult than deciding what combo of eggs and protein you'll be getting. Not to spoil the review but in the future I might be better off ordering three scones and coffee and juice. I can make eggs but there is almost no chance I'm going to bake scones.

That's a proper cheese melt right there.

The cross section reveals truth.

The Sandwich - Speedy Eggwich. It's the only breakfast sandwich on the menu and there are no options offered. As luck would have it I was in the mood for sausage although I did briefly flirt with the idea of getting a scramble or something other than a sandwich. My sense of duty prevailed and I padded it with a side order of cheesy grits and a scone. Wholly unnecessary but irresistible. You may be aware that when I review a place for a second time I do not read my previous review so as to have an entirely fresh perspective. This can, and does, lead to redundancy or consistency, it depends on how you look at it. Having said that I'm pretty sure this order was a duplicate of the order from two years ago with the possible exception of scone choice.

Upon preparing for the cross section photo the first discovery was that the chicken egg was not runny. I fought back my tears and valiantly soldiered forward. Sense of duty, again. I've had plenty of sandwiches that didn't have a runny egg but I was really hoping for it on this one. Also apparent from the start was that the English Muffin was overly toasted and a bit too crunchy. It gave it a dryness I didn't appreciate. It was getting harder and harder to continue but I was hungry and of course I was going to devour this sandwich - let's not kid ourselves. On a positive note the sausage hit the right notes and the cheddar cheese was melted properly. 

The Result - 3.12 Senses of Duty out of 5 Senses of Duty. The sandwich was OK but I had higher hopes and ultimately it kind of missed the mark. It didn't have the squish or the goo-factor I'm looking for in the morning. Perhaps I should have trusted my instincts and left you people without an update on the Speedy Eggwich? I think the sandwich might be an obligatory menu offering - I'll bet it isn't ordered nearly as often as the scrambles and whatnot. Still, there are positives in these situations, such as the cheesy grits and scone. The cheesy grits aren't on the same level as those from Crema Cafe but that's an unrealistic standard. The scones are still fantastic.
