Breakfast Sandwich #96 - Tavernakaya aka Nice Buns!

I had never been to Tavernakaya. I hadn't even considered it as a possible location for a breakfast sandwich or bun, as it were. A mantou bun is not technically a sandwich, it depends on if you consider steamed buns to be bread. If you define bread as requiring baking then these buns aren't going to qualify. I don't know and don't much care. I'm getting fast and loose with the rules around here since I passed the benchmark of 52 sandwiches long ago and there have already been reviews of crepes and open-faced sandwiches. One day a review of a breakfast burrito will appear here and all manner of outrage will be flung in my general direction and it still won't matter a lick. So what.

When I sat down at Tavernakaya it felt like it had been months since I had had a breakfast sandwich at a proper restaurant. If you don't count the bullshit sandwich I had at Panera (I don't) you have to go back to May 28 to find a decent sandwich arepa. That isn't very long ago, but it felt like an eternity. That's what happens when you eat a breakfast sandwich while standing in a parking lot (#94) or sitting in a car (#95).

If I hadn't snapped this photo I'd be hard pressed to remember what was in these.

Three little pigs - chorizo, ham, bacon. Also, sometimes you order a greyhound and you're expecting white grapefruit juice but it comes with pink and if it weren't for your delicious sandwiches you'd probably be sad. 

The real reason I took this is to bring back the memory of the tactile sensation that is the squeezing of the bun. 
The Sandwiches (Buns) - This would have been a hell of a lot easier if I had ordered three of the same but that wasn't going to happen. First, let's be clear that I did NOT order the House-Smoked Tofu option. I'm sure it's delicious but that isn't how we do things around here. You know this.

I could, and may, go on at length about the mantou buns 馒头 alone. You've had them. You know how wonderful they feel in your fingers. These had the perfect amount of taut-squishiness that feels oh so right in your hands. A gentle squeeze yields to the pressure, and when you release a light imprint is left for just a split second and then the bun snaps back to it's original form. I could squeeze these buns all day. I may take some into work and have them at my desk instead of one of those stress relieving balls that nobody actually uses.

The eggs are scrambled on all of these. A runny egg wouldn't really work here and I'm not even going to hold that against them.

OK, let's get down to business.

House-Made Chorizo. The only previous chorizo based breakfast sandwich I reviewed was back in February of 2015. Is that possible? Maybe I missed one. This chorizo was excellent for this situation. Not too greasy or cinnamony, it was suited for these buns. At a taqueria I could see wanting a greasier version, but for these, it was perfect. The avocado crema gave this bun a cool viscosity and blended well with the eggs. Cilantro was a crucial touch on this one. I give it a 4.55 overall.

Nueske's Ham. You've heard me praise Nueske's Ham at length so I won't do it again here. It's always fantastic. Here is where my skills as a reviewer are exposed for the fraud that they are. At the time I thought they had mistakingly put the spicy mayo from the bacon bun on this bun, instead of the togarashi maple. They look the same in the photo above. When I tasted a pepper spice I thought that was what happened but now I'm sitting here with a search engine and I find that togarashi 唐辛子 is chili pepper. I think I got hung up on the spiciness and didn't take into account the subtle maple. At this point I can't be sure. What I can say is that this bun had a richness and heavenly salty flavor that was delightful and made this my favorite. I give it a solid 4.85 even though I didn't know the word for chili pepper in Mandarin or even Cantonese.

Bacon. This one had bacon on it, hence it's clever name. This was a solid bun but I feel it is included simply because they have to have a bacon version on the menu. People think of brunch, they think of bacon, here is that bacon. There was nothing wrong with this bun, the spicy mayo and scallions gave it that extra touch. Although it was my least favorite (one of them had to be) it's still a good 4.31 on the sandwich scale.

If I had to do this all over again and I were me I would order two of the Nueske's Ham and one of the Chorizo and I think I'd be happy as a pig in...a bun.

Finally, I feel compelled to comment on the house salad. It was very lightly dressed mixed greens and if you're up to speed on my reviews you know I appreciate these as a side during breakfast. I find them to be refreshing alternative to potatoes.

The Result(s) - 4.57 Bun Averages out of 5 Bun Averages. I did the math and that seems like a good rating. These buns were excellent. Nice buns! $12 might seem a touch expensive for these but you aren't going to get this level of quality for much less than that.

The Whole Damn 2016 Year End List


Not surprisingly, I ate fewer breakfast sandwiches in 2016 than in 2015 (31 compared to 49). It's not easy keeping up that level of intake, especially when trying to get to new locations after having nearly exhausted those in my immediate vicinity. You think being a sandwich blogger is all glitz and glitter and beautiful people serving you bacon on a gilded cushion? It is not. To be fair it isn't very hard either. How do you rate the level of sacrifice involved with driving to Middleton on a Saturday morning? That's how hard this is. It isn't trench warfare.

The biggest news of 2016 was that breakfast sandwich perfection was found. A Chorizo-Egg Torta proved to me that a perfect rating could be had. I wasn't sure if it could happen or what it would look like, I only hoped that I would recognize it when it revealed itself. I did, and it was beautiful. I shed a single tear and the salinity of that sob droplet blended perfectly with the chorizo and egg and formed a rainbow in my mouth.

Several months later I had the opposite experience at Denny's. The Moons Over My Hammy sandwich tasted like it had enough salt to melt the polar ice cap and at $8.59 (including hash browns) is one of the biggest ripoffs in the sandwich-sphere. I still haven't completely given up on the idea of filing a class action lawsuit on behalf of those who have had to endure this abomination.

Looking at the numbers it would appear that 2016 was more about quality than quantity. The average rating for a sandwich was 4.02 compared to 3.59 in 2015. The average cost was a bit higher as well, $6.95 vs. $6.65 although the inclusion of sides throws that number off. I spent a total of $166.84 on sandwiches not including tax, coffee, etc. That's down $125.89 from 2015.

A couple of other trends jump off the page. Most of the fast food or chain restaurants are clumped together at the 3.5 rating, which seems high in retrospect, but that's where they rated. Also, what's with all the "Public Houses"? There are three of them here but not a single "Diner". Diners aren't really known for breakfast sandwiches although perhaps I need to explore that more.

In general I think my ratings were a bit more generous in 2016. I've touched on this subject before and it's not worth getting into again, but I think it's accurate.

To get a better understanding of the sandwich you need to read the review but to get to the true heart and soul of the sandwich you need to eat it.

I'd like to have more guest reviewers. Maybe some chef can recreate and explain to me the perfect puffy egg cloud I had shortly before Christmas. Maybe I'll just go to Bradbury's every weekend interspersed with occasional trips to Sardine. Maybe some of you sandwich enthusiasts have fantastic ideas that I haven't considered and you'll pass them along.

Breakfast Sandwich #51 - Xoco aka Gas Up The Car You're Gonna Need to Take A Drive

I had a trip to Chicago planned and naturally started my pre-research for breakfast options. I looked at two lists online and both included Xoco which happened to be close to my hotel. Xoco sounded familiar and it took me a minute to remember that Serious Eats had made a list of Must-Eat Breakfast Sandwiches Across America which I had referenced in March of 2015. That made the choice easy as there were several enticing options. Chicago Eater also posted a list of 15 breakfast sandwiches that includes Xoco but I didn't see it until today.

Xoco is a Rick Bayless restaurant and is next door to his Frontera Grill which I went to about 12 years ago and might be the first place I tasted mezcal. None of this is important although Rick Bayless is probably one of only a handful of famous chefs I can name. After Julia Childs and Aunt Jemima I start to run out of ideas. I had no idea until this writing that 7 different women filled the role of Aunt Jemima and one, Rosie Hall, had her grave declared a national landmark. Other not-important-information is that Rick Bayless is the brother of Skip Bayless.

Everything about these looked enticing and I was leaning towards getting a blood orange margarita until I saw that Xoco has "bean to cup" hot chocolate. I know that sounds like some pretentious hipster garbage but I ordered one and it turns out its the best damn cup of hot chocolate I ever had.

Oh my goodness. What a fine, fine looking sandwich. 
The Sandwich - Chorizo-Egg Torta. I while back I reviewed a chorizo based breakfast sandwich which at the time struck me as odd, mostly because it was not at a Mexican style restaurant. Chorizo makes more sense at this place and I already knew I was ordering this at least a week before I got there. I'm just going to cut to the chase and say there was nothing wrong with this sandwich and I couldn't find a single thing I would have changed about it. The bread was toasted and a little crunchy on the outside, but chewy and soft beneath the crust. The chorizo was fantastic, not too cinnamonny or greasy or fatty. Fluffy eggs, perfectly ripe avocado, a nice compliment of cheese, and tomatillo salsa to drizzle on every bite. Perfect. After I was done I used my fork to clean up the little bits that had fallen in the basket, then I licked the wax paper it had been on, then I ate the wax paper. I had spilled a tiny bit on the table so I ate the table and when the kid sitting next to me started looking at me funny I told him he was throwing his youth away on a stupid order of French Toast. Dumb kid. He didn't even have a hot chocolate.

I should note that I had several bites of the Zucchini-Egg-Poblano Torta and that also was fantastic. It had a little tarragon or thyme flavor to it. Something tasty was happening there but I was too caught up in my own sandwich to focus on that.

The Result - 5 primo hot chocolates out of 5 primo hot chocolates. Some people don't believe in true love and I don't know what you can say to those people. They have to find out on their own. I considered giving this sandwich a 4.99 simply because it's 146 miles from my house - but that's not fair to the sandwich. We strive to provide fair and accurate research here.
